There is nothing quite as amazing as a perfectly roasted prime rib or standing rib roast! Of course, when you cook such an incredibly rich and hearty roast like that for your Christmas, Thanksgiving, Easter, or special occasion dinner you really want the whole meal to as perfect as the meaty main dish!

Now that your roast is out of the oven and resting before serving, it's probably fair to say that the aroma in your home is nothing short of purely tantalizing! Depending on your preferences, you can start with some light appetizers like the standard relish trays, some deviled eggs, or an antipasto platter.

More appetizers that could be served before a prime rib dinner would be a shrimp cocktail, lobster artichoke dip, or crostini. Heartier appetizers like my sausage cream cheese balls or breaded stuffed scallops are great but maybe you'd rather save room for that perfectly marbled prime rib roast!

Fondant potatoes are crisped on both ends before adding broth and baking so that the inside is absolutely tender, creamy, and infused with the delicious broth flavor. Serve them with their own reduced broth, or some prime rib au jus!

My au jus that is made especially for prime rib includes the rich, beefy prime rib drippings with the most perfect wine pairing for a prime rib that there is! Cabernet sauvignon is my first choice pick for serving with prime rib or ribeye steaks!

Other great wine pairings for prime rib include any Cabernet wine, Syrah, Petit Sirah, Pinot Noir, Merlot, or Zinfandel. Although with the accompaniment of horseradish you can disregard some of the traditional wine pairings!

If I wasn't using my wine for the au jus, which is why it's also called a cabernet jus, I would sit down with a tall glass of Riesling. Totally ready for dessert too with that wine pick!

  • 1 tablespoon shallot (finely minced)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • ⅓ cup olive oil (extra virgin)
  • each, salt & pepper (to taste)
  • 1 head butter lettuce (aka Boston or bibb lettuce)
  • 1 heart romaine lettuce

  • In a small bowl, mix the shallot, Dijon mustard, lemon juice, honey, salt, and pepper until well combined. Whisk in the olive oil.
